Zephyr Takes Flight

The wonders of flight have fascinated mankind for generations. From soaring eagles to birds migrating in V-formations, we have all wanted to fly above the clouds. In our own little corner of the world, we are fascinated by flight on a smaller scale: hummingbirds and butterflies have been finding their way to our backyard butterfly bushes, coneflower, and lantana. Slowly but surely we are adding more plants to attract these creatures that enchant us with their graceful flights of fancy, as they stop on their journey from wherever they have been to wherever they are going. We hope they speak fondly of us when they arrive at their destination!

Our featured book this week is also a flight of fancy complete with flying pigs, a secret workshop, and an adventure to a magical land. Join our little heroine, Zephyr, as she does a triple loop-de-loop spectacular into a soaring imaginative adventure.

Bursting with the flavors of the summer garden, these savory pancakes are equally tasty served warm or cold. Although Zephyr has her pancakes for breakfast, these make an excellent lunch or dinner. 

Zephyr's Spectacular Triple-Veggie Pancakes

Makes about 10

Adapted from Carrot-Zucchini Pancakes.

Ingredients

  • 4 eggs
  • 3/4 teaspoon salt
  • 2 cups shredded zucchini and/or yellow squash (about 2 medium squash)
  • 2 cups shredded carrot (about 3 medium whole carrots)
  • 1/3 cup white whole wheat flour
  • 2 tablespoons chopped fresh basil
  1. In a large mixing bowl, whisk the eggs and salt until frothy. 
  2. Stir in the shredded squash and/or zucchini and carrot. 
  3. Whisk in the flour and basil until well combined. 
  4. Heat a skillet or griddle over medium heat. Place 1/4 cup scoops of batter on cooking surface and cook for 4-6 minutes on each side.

There's a certain kind of excitement that comes with using familiar art supplies to transform everyday objects that might otherwise be discarded into works of imagination. Pipe cleaners become propellers, popsicle sticks become wings, and tape becomes highly sophisticated welding material... the possibilities are absolutely endless! So fill your worktable with odds and ends and let the creating begin.

Found Art Airplanes

Supplies

  • Imagination
  • glue
  • tape
  • scissors
  • markers, crayons, etc. 
  • colored paper
  • treasures from the recycling bin
  1. Collect a variety of art supplies and recyclables and let imaginations go to work creating airplanes!

Bonus: Tape a piece of string or yarn to the top of your plane for high-flying fun!
